Shokupan Recipe

This recipe it based on Hairy Biker's recipe (rip Dave) published on the BBC website.

I adapted it for my own kitchen setup and ingredients that I have access to:
I am writing this recipe here so that it's easier for myself to follow.

Ingredients List

Yudane

  • 30g strong white flour

  • 60g milk, whole

  • 60g water

Dough - first pass

  • 325g strong white flour

  • 55g granulated sugar

  • 7g instant yeast

  • 6g salt

  • 15g condensed milk

Dough - second pass

  • (Yudane)

  • 120g milk, whole

  • 1 egg, beaten

Dough - third pass

  • 55g butter, unsalted, softened

Brushing before baking

  • 1 egg, beaten

  • 15g milk, whole

Method

Step 1 - Make Yudane

  1. Add the following ingredients into a saucepan:

    • 30g strong white flour

    • 60g milk, whole

    • 60g water

  2. Set hob to 90°C and constantly stir until content reaches 65°C or consistency of mashed potatoes.

  3. Remove from heat, spread formed Yudane around the saucepan so it cools to room temperature.

Step 2 - Make dough

  1. Add the following ingredients into standmixer and loosely mix together:

    • 325g strong white flour

    • 55g granulated sugar

    • 7g instant yeast

    • 6g salt

    • 15g condensed milk

  2. Add the following ingredients into the standmixer:

    • Yudane, cooled

    • 120g milk, whole

    • 1 egg, beaten

  3. Start slow and over 5 minutes progress to Speed 3.

  4. Add the following ingredients into the standmixer:

    • 55g butter, unsalted, softened

  5. Continue at Speed 3 for 5 minutes, or until butter is absorbed (no more sliding around).

  6. Mix for an additional 5 minutes at medium high speed. Dough is ready when windowpane test passes.

  7. Transfer dough to a lightly oiled bowl.
    Cover and allow it to rise for 1 hour in oven, set to Bottom Heat at 
    40°C.

Step 3 - Forming

  1. Oil a loaf tin.

  2. Turn the dough onto floured surface, and divide into four pieces.

  3. With a rolling pin, roll each piece into a long rectangle shape.

  4. Along the long edge, fold in a third from each side.

  5. From one of the short edges, roll up the sheet dough.

  6. Place the rolled up dough into the pre-oiled loaf tin.

  7. Cover and return to oven.
    Allow it to rise for 45 minutes.

Step 4 - Baking

  1. With the dough removed from the oven, preheat the oven with the following settings:

    • Top and Bottom Heat Gentle

    • 180°C

  2. Beat the following ingredients together:

    • 1 egg, beaten

    • 15g milk, whole

  3. Immediately before placing the loaf tin into the oven, thoroughly brush the mixture onto the formed dough.

  4. Place the loaf tin in the oven and bake for 35 minutes.
    Or with a meat thermometer inserted, bake till internal temperature reaches 90
    °C.

  5. Remove from the oven and allow the tin to cool for a few minutes.

  6. Remove the loaf from the tin and allow to cool on a wire rack.
